Strawberry Swiss-Roll

Ingredients

  • 1 tbsp Rein Vanilla Extract
  • 4 Eggs - Egg whites and yolks separated
  • 6 tbsp caster sugar
  • 3 tbsp Milk
  • 3 tbsp Vegetable oil
  • 1/4 Cup Cake Flour
  • 3 tbsp Corn Flour
  • 1 tbsp Lemon Juice
  • 7 Strawberries halved
  • 1 cup whipped cream

Directions

  1. Mix egg yolks, Rein Vanilla extract, 2 tbsp sugar, milk, oil, cake flour and cornflour together and set aside.
  2. In a separate bowl whisk egg whites and lemon juice on medium high speed. Slowly add the remaining sugar and whisk until it reaches soft to stiff peaks.
  3. Fold in the whisked egg whites with the yolk mixture carefully.
  4. Pour the batter on a lined Swiss-roll pan and bake in a pre-heated oven for 17 minutes at 350 degrees F.
  5. Once baked, add the whipped cream and arrange the strawberries over and roll it carefully. Cut into slices to serve.
